  • 1 cup chopped pecans For a crunchy topping.
  • 1/4 cup butter Or use a vegan substitute.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes. Boil them in salted water until tender, then drain and mash.
  3. In a large bowl, mix the mashed sweet potatoes with maple syrup, brown sugar, raisins, and spices.
  4. Transfer the mixture to a greased baking dish.
Topping and Baking
  1. Top with marshmallows and a mixture of chopped pecans, melted butter, and a pinch of salt.
  2. Bake for about 25-30 minutes or until the topping is golden brown and the casserole is heated through.
