Ingredients
  

For the Sourdough Pancakes
  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 each egg
  • 1 tbsp sugar
  • 1 tsp baking soda
  • ½ tsp salt
For the Sourdough Crackers
  • 1 cup sourdough discard
  • 2 tbsp olive oil
  • ½ tsp salt
  • 1 tsp garlic powder (optional)
  • 1 tsp dried rosemary or thyme

Method
 

Sourdough Pancakes
  1. In a mixing bowl, whisk together the sourdough discard, milk, and egg.
  2. Add the flour, sugar, salt, and baking soda. Mix until smooth.
  3. Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter.
  4. Pour the batter onto the hot skillet and cook until bubbles form. Flip and cook until golden brown.
  5. Serve warm with maple syrup and butter.
Sourdough Crackers
  1. Preheat your oven to 350°F (175°C).
  2. Mix all ingredients in a bowl to form a smooth batter.
  3. Spread the mixture thinly on parchment paper using a spatula.
  4. Score the dough into squares with a knife.
  5. Bake for 20-25 minutes or until golden and crispy.
  6. Let cool, then break into pieces and enjoy.

Notes

Sourdough discard can also be added to muffins, pizza dough, and more, giving extra flavor and texture to various baked goods.
