Ingredients
  

For the cookies
  • 1 small overripe banana, mashed (measuring 1/4 cup) If overripe banana is more than 1/4 cup, discard the overflow.
  • 1/2 cup vegetable oil or melted butter Either works well for this recipe.
  • 1 cup light brown sugar, packed
  • 1 egg yolk For richer flavor.
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips Feel free to add more if desired.

Method
 

Preparation
  1. In a large bowl, mix together the melted butter (or oil), brown sugar, and mashed banana until well combined.
  2. Add the egg yolk and vanilla extract, mixing until fully incorporated.
  3. Sift in the flour, salt, baking soda, and cinnamon, stirring until the mixture is well blended and streak-free.
  4. Fold in the chocolate chips gently.
  5. Cover the bowl and let the dough rest while preheating the oven to 350°F.
Baking
  1. Line a cookie sheet with parchment paper and scoop about 1-inch balls of dough onto the sheet, leaving 2 inches of space between each.
  2. Bake for 10 to 11 minutes, or until the edges are set and the centers are slightly underbaked.
  3. Let the cookies cool on the sheet before transferring them to a wire rack.

Notes

Serve these cookies warm, with a scoop of vanilla ice cream or drizzled with chocolate sauce for extra flair. Store in an airtight container for up to a week.
