Cake Ingredients
  • 15.25 ounces vanilla cake mix
  • 12 ounces orange soda
  • 1 teaspoon pure orange extract
  • 2 drops orange gel food color adjust to desired color
Frosting Ingredients
  • 24 ounces whipped white frosting two 12-ounce containers

Method
 

Preparation
  1. Preheat your oven to 350 degrees F. Line two 9-inch round cake pans with parchment circles and lightly spray them with baking spray.
  2. In a medium bowl, combine the vanilla cake mix and orange soda, then stir in the orange extract. Mix using a handheld mixer on medium-low for about 1 to 1.5 minutes until smooth.
  3. Divide the batter evenly between the prepared cake pans and bake for 22 to 24 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow the cakes to cool completely in the pans.
Frosting
  1. Mix half of the whipped frosting with a couple of drops of orange gel food color until the frosting is uniform.
  2. Place one cooled cake layer on a serving dish and spread half of the colored frosting on top. Add the second cake layer and frost the top and sides with the remaining frosting.
  3. If desired, use a decorator's bag to pipe decorative shapes along the edge of the cake.

Notes

Serve with coffee or sweet tea. Store leftovers covered with plastic wrap or in an airtight container for 3 to 5 days in the refrigerator. For best results, ingredients should be at room temperature before mixing, and zest from fresh oranges can be added for more flavor.
