Ingredients
  

For the cake
  • 1 tablespoon unsalted butter, softened to room temperature
  • 1 tablespoon neutral oil, like canola oil or vegetable oil
  • 3 tablespoons white granulated sugar
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk (whole milk recommended)
  • 5 tablespoons all-purpose flour (or 1/4 cup + 1 tablespoon)
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon kosher salt
For the frosting
  • 2 tablespoons unsalted butter, softened to room temperature
  • 2 teaspoons milk (whole milk recommended)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar add more to make frosting thicker
  • pinch kosher salt omit if using salted butter

Method
 

Preparation
  1. Preheat your oven to 350°F and grease a large ramekin with butter or cooking spray. For added insurance against sticking, line the bottom with a circle of parchment paper.
  2. In a medium bowl, mix together the softened butter and oil until well combined.
  3. Add the sugar and beat until pale and slightly fluffy.
  4. Stir in the egg white, milk, and vanilla extract until mixed.
  5. Gently fold in the flour, baking powder, and kosher salt using a rubber spatula.
Baking
  1. Pour the batter into the prepared ramekin.
  2. Bake for 22-27 minutes, until the top is golden and a toothpick comes out with moist crumbs.
Frosting
  1. While the cake cools, whip up the frosting by stirring together the butter and milk.
  2. Mix in the powdered sugar and vanilla, adjusting the consistency as needed.
Serving
  1. Once your cake is cool, frost it either by piping or spooning directly onto the cake.

Notes

Best enjoyed warm with freshly made frosting. Pair with ice cream or tea for a delightful experience. Experiment with different extracts or mix-ins for variations.
