Method
Preparation of the crust
- Grease a 9-inch pie dish with butter or shortening and set it aside.
- Place the graham crackers and brown sugar in a food processor and blend until fine crumbs form.
- While the food processor runs at low speed, gradually pour in the melted butter until the crumbs start to stick together.
- Firmly press the crumbs into the bottom and up the sides of the pie dish.
- Freeze the crust for 15-20 minutes, or until firm.
Preparation of the filling
- In a large bowl, whisk together the milk, green food coloring, and mint extract until evenly combined.
- Add the vanilla pudding mix and continue whisking until the pudding starts to thicken.
- Let the pudding rest for about 5 minutes to thicken further.
- Fold the whipped topping into the pudding until well mixed.
- Spoon the filling into the prepared crust and smooth out the top.
Chill the pie
- Place the pie in the freezer for at least 6 hours or until the filling is completely set.
Serving
- Remove the pie from the freezer about 10 minutes before slicing to make cutting easier.
- Use a sharp knife dipped in warm water and wiped dry for clean edges.
- Serve on chilled plates with optional whipped cream and maraschino cherries.

Press the crust firmly to create a smooth base. Use cold ingredients for the best texture. Adjust mint extract to personal taste. Store in the freezer for long-term storage, or in the refrigerator for short-term enjoyment.
