Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with foil or parchment, letting it hang over the edges.
- Lay the saltine crackers in a snug single layer to form the base.
Making Chocolate Layer
- Melt the chocolate chips and coconut oil in a microwave in 20 to 30-second bursts until smooth.
- Spread the melted chocolate over the cracker base and chill in the fridge to partially set.
Making Caramel
- In a saucepan, melt the butter and add the brown sugar, corn syrup, and salt.
- Bring the mixture to a boil and let it bubble for 3 minutes without stirring.
- Remove from heat and stir in the vanilla.
- Pour the caramel over the chocolate layer and spread it quickly.
Finishing Touches
- Sprinkle mini chocolate chips over the hot caramel and finish with flaky sea salt.
- Let the mixture chill in the fridge until completely set.
- Lift from the tray, slice into squares, and enjoy.
Notes
Serve at room temperature or chilled. Store in an airtight container at room temperature for up to a week or freeze for up to three months, separating layers with parchment paper.
