Ingredients
  

For the Bars
  • 35 to 40 pieces saltine crackers Form the base
  • 1 1/2 cups semi-sweet chocolate chips Main chocolate layer
  • 1 teaspoon coconut oil Optional, for melting chocolate
  • 1 cup unsalted butter For the caramel
  • 1 cup packed brown sugar For the caramel
  • 1/4 cup light corn syrup For the caramel
  • 1/2 teaspoon salt For the caramel
  • 1 teaspoon vanilla extract For the caramel
  • 1/2 cup mini chocolate chips For topping
  • Flaky sea salt For garnish on top

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with foil or parchment, letting it hang over the edges.
  2. Lay the saltine crackers in a snug single layer to form the base.
Making Chocolate Layer
  1. Melt the chocolate chips and coconut oil in a microwave in 20 to 30-second bursts until smooth.
  2. Spread the melted chocolate over the cracker base and chill in the fridge to partially set.
Making Caramel
  1. In a saucepan, melt the butter and add the brown sugar, corn syrup, and salt.
  2. Bring the mixture to a boil and let it bubble for 3 minutes without stirring.
  3. Remove from heat and stir in the vanilla.
  4. Pour the caramel over the chocolate layer and spread it quickly.
Finishing Touches
  1. Sprinkle mini chocolate chips over the hot caramel and finish with flaky sea salt.
  2. Let the mixture chill in the fridge until completely set.
  3. Lift from the tray, slice into squares, and enjoy.

Notes

Serve at room temperature or chilled. Store in an airtight container at room temperature for up to a week or freeze for up to three months, separating layers with parchment paper.
