Preparation
- Preheat the oven to 150°C (or 130°C fan-forced).
- In an electric mixer fitted with a paddle attachment, blend the softened butter and caster sugar until light and fluffy.
- Gradually incorporate the plain and rice flours until a smooth dough forms.
- Turn the dough onto a lightly floured surface and knead until unified.
- Divide the dough in half and roll it out between sheets of baking paper to a thickness of 5mm.
- Chill the rolled dough for 30 minutes.
Baking
- Using a 5cm cutter, create rounds from the chilled dough and place them on lined baking trays.
- Bake in the oven for 30 to 35 minutes until golden.
- Allow to cool on the trays after baking.
Assembly
- Spread each cooled biscuit with salted caramel.
- Melt chopped dark chocolate in the microwave and stir in the extra butter until combined.
- Spread the chocolate mixture over the caramel layer and let it firm up for 1 hour.
Notes
Store biscuits in an airtight container at room temperature. For longer freshness, consider refrigerating them, but bring to room temperature before enjoying.
