Method
Prepare Cheesecake Filling
- In a bowl, combine the cream cheese, powdered sugar, and vanilla, mixing until smooth.
- Scoop small portions (about a tablespoon each) and freeze for 20 to 30 minutes.
Make Cookie Dough
- In another bowl, cream the softened butter and sugars until fluffy.
- Add the egg and vanilla, blending well.
- Fold in the flour, baking soda, and a pinch of salt until fully combined.
Assemble Cookies
- Take a generous spoonful of dough and flatten it gently.
- Place a piece of the frozen cheesecake filling at the center and cover with more dough, sealing the edges.
Bake
- Preheat the oven to 175 degrees Celsius (345 degrees Fahrenheit).
- Place the cookies on a parchment-lined baking sheet and bake for 12 to 14 minutes.
Finish
- Cool cookies completely on a wire rack.
- Drizzle with salted caramel sauce and sprinkle with sea salt flakes if desired.
Notes
Store cookies in an airtight container at room temperature for up to a week. Refrigeration is also possible, but they may be hard to resist even chilled.
