Roasting
- Arrange the sweet potato slices in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, turning them halfway through.
- They are ready when tender and glistening with a golden glow.
Serving
- Remove from the oven and allow to cool slightly.
- Arrange on a serving platter and sprinkle with crumbled feta cheese.
- Drizzle with honey and garnish with chopped parsley.
- Serve warm or at room temperature.
