  • 1 teaspoon smoked paprika Experiment with spices!
  • ¾ cup crumbled feta cheese You can exchange feta for goat cheese for a tangy twist.
  • ¼ cup honey Can substitute with maple syrup for different sweetness.
  • 2 tablespoons chopped fresh parsley Adds a pop of color.

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into ½-inch thick rounds using a sharp knife.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
Roasting
  1. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, turning them halfway through.
  3. They are ready when tender and glistening with a golden glow.
Serving
  1. Remove from the oven and allow to cool slightly.
  2. Arrange on a serving platter and sprinkle with crumbled feta cheese.
  3. Drizzle with honey and garnish with chopped parsley.
  4. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat gently in the oven to restore crispiness.
