Preparation
- Preheat your oven to 350°F (175°C).
- Melt the salted sweet cream butter in a medium bowl.
- Add the light brown sugar, pure vanilla extract, and ground cinnamon to the melted butter and stir until well combined.
- Fold in the peanut butter Ritz bits until they are evenly coated.
Baking
- Use a cookie scoop to place spoonfuls of the mixture onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until golden brown.
Coating
- In a small bowl, combine granulated sugar and ground cinnamon for the coating.
- Once baked, while still warm, roll the bites in the cinnamon-sugar mixture.
- Let cool slightly on a wire rack before serving.
