  • 8.8 oz peanut butter Ritz bits
  • 1/2 cup salted sweet cream butter Must be melted
  • 1/3 cup light brown sugar Plus an additional 2 tablespoons
  • 3/4 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon For the mixture
Coating
  • 3 tbsp granulated sugar
  • 3/4 tsp ground cinnamon For coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Melt the salted sweet cream butter in a medium bowl.
  3. Add the light brown sugar, pure vanilla extract, and ground cinnamon to the melted butter and stir until well combined.
  4. Fold in the peanut butter Ritz bits until they are evenly coated.
Baking
  1. Use a cookie scoop to place spoonfuls of the mixture onto a parchment-lined baking sheet.
  2. Bake for 10-12 minutes or until golden brown.
Coating
  1. In a small bowl, combine granulated sugar and ground cinnamon for the coating.
  2. Once baked, while still warm, roll the bites in the cinnamon-sugar mixture.
  3. Let cool slightly on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to 3 days. For variations, try adding cocoa powder or nuts.
