Ingredients
  

Crust and Topping
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter, room temperature Plus 1 tablespoon for greasing the baking dish
Filling
  • 2 cups ricotta cheese (1 lb)
  • 3/4 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Grease the bottom and sides of a 13 x 9 inch baking dish with 1 tablespoon of butter.
  3. In a food processor, mix the flour, baking soda, and salt by pulsing them together.
  4. Add the butter cut into 1 tablespoon pieces to the flour mixture and pulse until crumbly.
  5. In a medium bowl, combine the ricotta cheese, sugar, eggs, and vanilla extract until well mixed.
Assembly and Baking
  1. Press 2/3 of the flour mixture firmly into the bottom of the prepared baking dish to form a crust.
  2. Pour the ricotta mixture over the crust.
  3. Sprinkle the remaining flour mixture over the top as a crumbly topping.
  4. Bake in the preheated oven for 35-40 minutes.
  5. Let the bars cool for about 10 minutes before cutting.

Notes

For serving, sprinkle with powdered sugar. Best enjoyed with coffee or iced tea. Store at room temperature covered.
