Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter (room temperature) Plus 1 Tablespoon for greasing the baking dish
For the filling
  • 2 cups ricotta cheese (approximately 1 lb)
  • 3/4 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and sides of a 13 x 9 inch baking dish with 1 Tablespoon of butter.
  2. In a food processor, combine the flour, baking soda, and salt. Pulse until blended.
  3. Add the butter in 1 tablespoon pieces to the flour mixture and pulse until crumbly, resembling peas.
  4. In a medium bowl, whisk together the ricotta cheese, sugar, eggs, and vanilla until well combined.
  5. Press 2/3 of the flour mixture into the bottom of the greased baking dish to form a crust.
  6. Pour the ricotta mixture over the crust, then sprinkle the remaining flour mixture on top.
Baking
  1. Bake in the oven for 35-40 minutes until the center has a slight jiggle and a light golden crust forms.
  2. Allow to cool for about 10 minutes, then cut into pieces.

Notes

Store the bars at room temperature, covered, for up to 3 days. For an extra twist, consider adding lemon zest to the ricotta mixture, or mix in chocolate chips or berries for added flavor.
