Ingredients
  

For the crust
  • 30 pieces Oreo cookies With cream included
  • 4 Tablespoons unsalted butter, melted
For the cheesecake filling
  • 3 8-ounce packages cream cheese, softened Ensure at room temperature
  • 1.5 cups granulated sugar
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1/4 cup all-purpose flour
  • 3 large eggs
  • Red and blue gel food colors For coloring the batter

Method
 

Preparation
  1. Preheat the oven to 325 degrees. Line a 9x13 pan with foil.
  2. Place the cookies in a food processor and pulse until they become crumbs.
  3. Stir in the melted butter until mixed. Press the mixture evenly in the bottom of the prepared pan. Bake for 10 minutes and then cool.
  4. Place a large baking sheet on the bottom rack of the oven and fill it halfway with water. Let the oven preheat again.
Making the cheesecake filling
  1. Beat the cream cheese and granulated sugar until creamy.
  2. Add the sour cream, vanilla, and flour, and beat again.
  3. Add the eggs and beat gently just until mixed in.
  4. Divide the batter into three bowls. Tint two of the bowls with red and blue gel food coloring.
Baking
  1. Spoon the tinted mixtures over the crust, alternating colors. Use a butter knife to swirl the colors together, being careful not to over mix.
  2. Place the pan on the oven rack above the pan of water and bake for 45-50 minutes.
  3. Remove from the oven and let cool on a wire rack for 1 hour. Refrigerate for 4-6 hours before cutting into squares.

Notes

These cheesecake bars are best served chilled. For an elegant touch, serve with fresh berries or a light dusting of powdered sugar. Pair with whipped cream or chocolate drizzle for added flair.
