Preparation
- Preheat the oven to 325 degrees. Line a 9x13 pan with foil.
- Place the cookies in a food processor and pulse until they become crumbs.
- Stir in the melted butter until mixed. Press the mixture evenly in the bottom of the prepared pan. Bake for 10 minutes and then cool.
- Place a large baking sheet on the bottom rack of the oven and fill it halfway with water. Let the oven preheat again.
Making the cheesecake filling
- Beat the cream cheese and granulated sugar until creamy.
- Add the sour cream, vanilla, and flour, and beat again.
- Add the eggs and beat gently just until mixed in.
- Divide the batter into three bowls. Tint two of the bowls with red and blue gel food coloring.
Baking
- Spoon the tinted mixtures over the crust, alternating colors. Use a butter knife to swirl the colors together, being careful not to over mix.
- Place the pan on the oven rack above the pan of water and bake for 45-50 minutes.
- Remove from the oven and let cool on a wire rack for 1 hour. Refrigerate for 4-6 hours before cutting into squares.
Notes
These cheesecake bars are best served chilled. For an elegant touch, serve with fresh berries or a light dusting of powdered sugar. Pair with whipped cream or chocolate drizzle for added flair.
