Cake Ingredients
  • 1 box Red Velvet Cake Mix plus the ingredients required to prepare it
  • 1 cup Sweetened Coconut Flakes for the base layer
  • 1 cup Walnuts, chopped for the base layer
  • 8 oz Cream Cheese room temperature
  • 2 cups Powdered Sugar for the cream cheese swirl
  • 1 tablespoon Vanilla Extract for flavor
  • 1 stick Melted Butter cooled slightly
  • 1 cup Mini Milk or Dark Chocolate Chips for topping

Method
 

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spray a 9 x 13 inch baking dish with cooking spray and evenly sprinkle down a layer of sweetened coconut flakes.
  3. Add a layer of the chopped walnuts on top.
  4. Prepare the red velvet cake mix according to the directions on the back of the package.
Baking
  1. Evenly pour the cake mix into the pan covering the coconut flakes and chopped walnuts.
  2. In a small bowl, mix together the softened cream cheese, powdered sugar, melted butter, and vanilla extract.
  3. Dollop the cream cheese mixture evenly over the cake batter and use a butter knife to swirl the cream cheese mixture into the cake batter.
  4. Sprinkle the top evenly with chocolate chips.
  5. Place it onto the center rack of the oven for 40-50 minutes or until the cake is cooked through.
Serving
  1. Let the cake cool slightly, serve warm or at room temperature.

Notes

Serve slices warm to enhance the cream cheese ribbons and melted chocolate chips. A scoop of vanilla bean ice cream or whipped cream enhances the dessert.
