Preparation
- Preheat your oven to 350 degrees F (175 degrees C). Grease a baking dish.
- In a mixing bowl, combine softened butter and granulated sugar until creamy.
- Add eggs, lemon juice, salt, and lemon zest. Mix well.
- Gradually add all purpose flour to the mixture and stir until combined.
- Fold in fresh raspberries gently.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25 minutes or until set.
Glazing
- While the bars are baking, prepare the glaze by mixing powdered sugar, raspberry jam, lemon juice, and lemon zest in a bowl until smooth.
- Once the bars are done, let them cool, then spread the glaze over the top before cutting into squares.
Notes
Store in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze the bars cut into squares for up to 2 months. Thaw in the fridge before serving.
