  • 2 large eggs
  • 1/2 cup vegetable oil

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the lemon cake mix, eggs, and vegetable oil. Stir until combined.
  3. Scoop out rounded tablespoons of the dough and roll them into balls.
  4. Place the dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 8-10 minutes, or until the edges are slightly golden.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
  3. Dust with confectioners' sugar while still warm.
