Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the lemon cake mix, eggs, and vegetable oil. Stir until combined.
- Scoop out rounded tablespoons of the dough and roll them into balls.
- Place the dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 8-10 minutes, or until the edges are slightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with confectioners' sugar while still warm.
Notes
These cookies are perfect when paired with lemonade or tea. Store in an airtight container at room temperature for up to a week. For longer storage, freeze with layers separated by parchment paper.
