  • 2 cups fresh purslane leaves Rinse thoroughly before use.
  • 1 cup cherry tomatoes, halved Use any color or variety.
  • 1 cup cucumbers, diced Peel if desired.
  • 1/2 cup feta cheese, crumbled Use more or less according to taste.
  • 2 tablespoons olive oil Good quality extra virgin olive oil recommended.
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.

Preparation
  1. In a large bowl, combine the fresh purslane leaves, halved cherry tomatoes, diced cucumbers, and crumbled feta cheese.
  2. In a separate small bowl, whisk together the olive oil and lemon juice.
  3. Drizzle the dressing over the salad and toss gently to combine.

Notes

Purslane can also be used in smoothies or stir-fried as an alternative to spinach. Its mild flavor works well in various dishes.
