Preparation
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
- In a large bowl, mix the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- In another bowl, combine the flour, baking powder, baking soda, pumpkin spice, and salt.
- Slowly add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in the nuts or chocolate chips.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes before removing them from the tin.
Notes
Serve muffins warm or at room temperature. Store in an airtight container for up to 3 days or in the fridge for a week.
