  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin spice
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional) Add for extra texture.

Preparation
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mix the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, pumpkin spice, and salt.
  4. Slowly add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in the nuts or chocolate chips.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool for a few minutes before removing them from the tin.

Notes

Serve muffins warm or at room temperature. Store in an airtight container for up to 3 days or in the fridge for a week.
