Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add in the vanilla extract and mix well.
- In another bowl, whisk together the flour, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Shape the dough into small disks and place them on a lined baking sheet.
- Make an indentation in the center of each disk and fill it with pumpkin pie filling.
- If desired, brush the edges with a beaten egg.
- Bake for about 15-18 minutes or until edges are lightly golden.
- Allow to cool on the baking sheet before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for about a week. Try adding chocolate chips or pecans for a twist!
