Ingredients
  

For the dough
  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1/2 cup powdered sugar Can use brown sugar for a richer flavor.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup pumpkin pie filling
  • 1 egg for egg wash (optional) For a golden finish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add in the vanilla extract and mix well.
  4. In another bowl, whisk together the flour, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Shape the dough into small disks and place them on a lined baking sheet.
  7. Make an indentation in the center of each disk and fill it with pumpkin pie filling.
  8. If desired, brush the edges with a beaten egg.
  9. Bake for about 15-18 minutes or until edges are lightly golden.
  10. Allow to cool on the baking sheet before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for about a week. Try adding chocolate chips or pecans for a twist!
