Ingredients
  

For the Bites
  • 200 g feta cheese, cut into cubes Use firm feta for the best results when frying.
  • 0.5 cup pistachios, finely crushed Can substitute with almonds or walnuts if desired.
  • 0.25 cup flour For coating the feta cubes.
  • 1 large egg, beaten Helps bind the coating.
  • 0.5 tsp black pepper For seasoning.
  • 2 tbsp olive oil For frying.
For the Blackberry Honey Glaze
  • 0.5 cup blackberries Fresh or frozen can be used.
  • 2 tbsp honey Adds sweetness to the glaze.
  • 1 tbsp lemon juice For acidity and balance.
For Garnish
  • 1 sprig fresh thyme Adds freshness to the presentation.
  • to taste cracked black pepper For additional seasoning.

Method
 

Preparation
  1. Pat the feta cubes dry and coat each lightly in flour.
  2. Dip the floured feta cubes into the beaten egg, allowing excess to drip off.
  3. Roll the feta cubes in the crushed pistachios mixed with black pepper, ensuring full coverage.
Cooking
  1. Heat the olive oil in a non-stick skillet over medium heat until shimmering.
  2. Carefully place the pistachio-coated feta cubes in the hot oil and fry for about 2-3 minutes total, turning gently until browned.
  3. Transfer the fried feta bites to a paper towel-lined plate to drain excess oil.
Making the Glaze
  1. In a small saucepan, combine the blackberries, honey, and lemon juice. Cook over medium-low heat for 3-5 minutes, squishing the berries with a spoon until softened.
  2. Optionally strain the glaze for a smooth finish or leave it chunky.
Serving
  1. Arrange the warm feta bites on a serving plate and drizzle with the blackberry honey glaze.
  2. Garnish with fresh thyme and cracked black pepper before serving.
  3. Serve immediately while the cheese is still warm.

Notes

These bites make an excellent appetizer or snack. They are best enjoyed fresh but can be stored in an airtight container for a day. Avoid reheating to preserve texture.
