Ingredients
  

Dough Ingredients
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup whole milk, warmed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
Filling Ingredients
  • 1 cup pistachios, shelled and chopped
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
Glaze Ingredients
  • 1/4 cup powdered sugar for glaze
  • 2 tablespoons milk for glaze

Method
 

Preparation
  1. In a small bowl, combine warm milk and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt.
  3. In another bowl, mix the melted butter and eggs. Once the yeast is frothy, add this mixture to the buttery goodness.
  4. Pour the wet ingredients into the dry ingredients, mixing until a dough forms.
  5. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until it doubles in size.
Filling and Shaping
  1. In a bowl, combine brown sugar, cinnamon, and chopped pistachios.
  2. Once the dough has risen, punch it down gently and roll it out into a 12x18 inch rectangle.
  3. Brush the dough with melted butter and sprinkle the pistachio mixture evenly on top.
  4. Starting from the long edge, roll the dough tightly into a log.
  5. Cut the log into 12 equal slices.
  6. Place the rolls in a greased baking dish, cover, and let them rise for another 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Bake the rolls in the preheated oven for 25-30 minutes or until golden brown.
  3. Remove from the oven and let them cool in the pan for about 15 minutes.
  4. In a small bowl, mix powdered sugar with 2 tablespoons of milk until smooth and drizzle this over the warm rolls.

Notes

Serve these rolls warm, possibly with coffee or tea. Garnish with additional chopped pistachios or a sprinkle of cinnamon.
