  • 1 cup unsalted butter, softened
  • 2.5 cups sugar
  • 5 large eggs
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup crushed pineapple, drained Make sure to drain well to prevent excess moisture.
  • 1 cup coconut milk
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
For the glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons pineapple juice
  • 1 tablespoon coconut milk
Optional toppings
  • to taste toasted coconut For serving.

  • to taste maraschino cherries For serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter and sugar mixture, mixing just until combined.
  6. Stir in the crushed pineapple, coconut milk, coconut extract, vanilla extract, and sweetened shredded coconut.
Baking
  1. Pour the batter into the prepared bundt pan and smooth the top.
  2. Bake for about 60-70 minutes or until a toothpick comes out clean.
  3. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
Glaze and serving
  1. Whisk powdered sugar, pineapple juice, and coconut milk together until smooth, then drizzle over the cooled cake.
  2. Optionally top with toasted coconut, pineapple tidbits, and a maraschino cherry.

Store in an airtight container at room temperature for up to 3 days or freeze for up to a month.
