  • 1 cup pineapple juice

  • 1 cup shredded coconut

  • 1 can cream of coconut for frosting
  • 1 cup powdered sugar
  • 1/2 cup whipped cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, coconut oil, pineapple juice, and eggs. Beat until smooth.
  3. Stir in the shredded coconut and chopped walnuts (if using).
  4. Pour the batter into the prepared pan, spreading it evenly.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted comes out clean. Cool completely.
Frosting Preparation
  1. In a separate bowl, mix the cream of coconut and powdered sugar until combined.
  2. Gently fold in the whipped cream to make it light and fluffy.

  1. Spread the cream of coconut mixture generously over the cooled cake.
