  • 450 grams cream cheese (at room temperature)

  • 1 cup confectioner's sugar
  • 1 teaspoon rum essence (or rum, optional)
  • 1 cup chopped pineapple (well drained)
  • 0.5 cup sweetened grated coconut

Method
 

Preparation of the crust
  1. Mix crushed cookies with melted butter and sugar until it forms a moist mixture.
  2. Line the bottom of a removable rim shape, pressing well.
  3. Refrigerate for 15-20 minutes.
Make the filling
  1. In a large bowl, beat the cream cheese until creamy and smooth.
  2. Add confectioner's sugar and rum essence (or rum) and mix well.
  3. In another container, beat the cream of milk to a firm whipped cream point and gently incorporate it into the cream cheese.
Add the tropical touch
  1. Gently mix the chopped pineapple and grated coconut into the cream, allowing each ingredient to blend harmoniously.
Mount the cheesecake
  1. Pour the filling onto the already firm base, smoothing the surface with a spatula.
