  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 2/3 cup whole milk plus extra for brushing
  • 1 tsp vanilla extract optional
  • 1 large egg optional, for brushing the top
Main Ingredients
  • 1/2 cup unsalted butter cold and cut into cubes
  • 1/2 cup raisins or currants, if preferred

Preparation
  1. Preheat oven to 400F (200C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter and mix until the texture resembles coarse crumbs.
  4. Stir in the raisins until evenly distributed.
  5. In a small bowl, mix the milk and vanilla extract, then pour into the dry ingredients.
  6. Stir gently until a dough forms, being careful not to overmix.
  7. Turn the dough onto a lightly floured surface and pat it into a 1 inch thick round.
  8. Cut into 8 wedges and place scones on the prepared baking sheet.
  9. Brush tops with milk or beaten egg for a golden crust.
Baking
  1. Bake for 15 to 18 minutes or until golden brown.
  2. Let cool slightly before serving.

Serve warm with butter, jam, or clotted cream. Store in an airtight container at room temperature for up to three days or freeze for up to a month.
