Ingredients
  

For the cupcakes
  • 15.25 ounces chocolate cake mix
  • 12 ounces Pepsi cola, room temperature
For the vanilla buttercream frosting
  • 1.5 cups unsalted butter, room temperature
  • 6 cups powdered sugar, sifted
  • 1 tablespoon vanilla extract
  • 0.25 cups heavy cream
  • 0.5 teaspoon salt
  • to taste red, white, and blue sprinkles optional garnish

Method
 

Preparation
  1. Preheat the oven to 350 degrees F. Line 2 standard muffin pans with 20 cupcake liners.
  2. In a large bowl, combine the dry chocolate cake mix with the room temperature Pepsi cola, beating on medium low speed for about a minute until thick and smooth.
  3. Fill the cupcake liners three-quarters full with the batter and bake for 20-23 minutes, or until a toothpick comes out clean.
  4. Allow the cupcakes to cool completely on a wire rack.
Making the Vanilla Buttercream
  1. Whisk the room temperature butter in a stand mixer for about two minutes until light and fluffy.
  2. Gradually add the sifted powdered sugar, increasing the mixer’s speed from low to high until fully incorporated.
  3. Mix in the vanilla extract, heavy cream, and salt, whipping until smooth and fluffy.
Frosting the Cupcakes
  1. Once cooled, frost the cupcakes with the buttercream and add sprinkles on top for a festive touch.

Notes

Store in an airtight container at room temperature for up to three days. Refrigerate for longer storage but let come to room temperature before serving.
