- In a large mixing bowl, whisk together the pudding mix, milk, vodka, peppermint schnapps, and espresso powder until smooth.
- In a separate bowl, whip the heavy cream with the peppermint extract until it forms soft peaks.
- Gently fold one and a half cups of the whipped cream into the pudding mixture until smooth.
- Carefully pour the pudding mix into shot glasses, filling them about three-quarters full.
- Refrigerate for 30 to 60 minutes to allow the pudding to set.
- Once set, pipe the reserved whipped cream on top and decorate with sprinkles and peppermint bark.
Notes
Store any extras in the fridge. They can also be made a day ahead to enhance the flavors.
