  • 1 box 3.9 ounce box Instant Chocolate Pudding Mix
  • 3/4 cup cold whole milk
  • 1/2 cup vodka Can be substituted with additional milk for a non-alcoholic version.
  • 1/4 cup peppermint schnapps Can be substituted with flavored syrups for a non-alcoholic version.
  • 2 to 3 tablespoons instant espresso powder Can be substituted with brewed espresso (cooled) with caution.
  • 2 cups heavy whipping cream, very cold Chill the mixing bowl and beaters before whipping for best results.
  • 1 teaspoon peppermint extract
  • to taste Optional: sprinkles and peppermint bark for topping Enhance presentation and flavor.
  • 12 pieces 2-ounce plastic shot glasses

Method
 

Preparation
  1. In a large mixing bowl, whisk together the pudding mix, milk, vodka, peppermint schnapps, and espresso powder until smooth.
  2. In a separate bowl, whip the heavy cream with the peppermint extract until it forms soft peaks.
  3. Gently fold one and a half cups of the whipped cream into the pudding mixture until smooth.
  4. Carefully pour the pudding mix into shot glasses, filling them about three-quarters full.
  5. Refrigerate for 30 to 60 minutes to allow the pudding to set.
  6. Once set, pipe the reserved whipped cream on top and decorate with sprinkles and peppermint bark.

Notes

Store any extras in the fridge. They can also be made a day ahead to enhance the flavors.
