Preparation
- Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.
- In a medium bowl, whisk together the flour and cornstarch until combined. Set aside.
- In a separate bowl, cream the softened butter until light and fluffy. Gradually add in 1 cup of powdered sugar.
- Mix in the clear vanilla until well distributed.
- Gradually incorporate the flour mixture and fold in the finely chopped pecans.
- Scoop small portions of dough and roll into balls. Refrigerate for 10 minutes.
Baking
- Bake the dough balls for 10 minutes or until lightly golden.
- Roll the warm cookies in powdered sugar for a sweet coating. Allow them to cool completely.
Notes
Store in an airtight container to preserve softness. Try adding almond extract for a twist, or substitute different nuts.
