Ingredients
  

For the bars
  • 3 large large eggs
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • ½ cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chopped pecans toasted for richer flavor, if desired

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, granulated sugar, brown sugar, and vegetable oil until smooth.
  3. Add the pure vanilla extract and stir to combine.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the chopped pecans.
  7. Pour the mixture into the prepared baking pan and smooth the top.
Baking
  1. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before cutting into squares or bars.

Notes

For serving, dust with powdered sugar and pair with coffee or tea. Store in an airtight container at room temperature for up to five days or freeze for longer storage. Defrost gently before serving.
