Preparation of Yogurt Mixture
- In a large bowl, mix together the Greek yogurt, peanut butter, honey, and vanilla extract until completely smooth and well combined.
Forming the Bites
- Using a small cookie scoop or spoon, portion the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
- Freeze for at least 2 hours or until firm.
Coating in Chocolate
- Melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each frozen yogurt ball into the melted chocolate, coating completely, then place back on the parchment-lined sheet.
- Sprinkle with flaky sea salt immediately while the chocolate is still wet.
Final Freezing
- Freeze for another 30 minutes until the chocolate is set.
Notes
Store in an airtight container in the freezer for up to 1 month. For easier retrieval, use silicone mats along with parchment paper.
