Ingredients
  

For the yogurt mixture
  • 2 cups plain Greek yogurt Make sure it's thick for the creamiest texture.
  • 1/2 cup natural peanut butter
  • 2 tablespoons honey Adjust amount if using flavored yogurt.
  • 1/2 teaspoon vanilla extract
For the chocolate coating
  • 8 oz dark chocolate chips Can substitute with milk or white chocolate.
  • 2 tablespoons coconut oil
  • to taste Flaky sea salt for topping Enhances the chocolate flavor.

Method
 

Preparation of Yogurt Mixture
  1. In a large bowl, mix together the Greek yogurt, peanut butter, honey, and vanilla extract until completely smooth and well combined.
Forming the Bites
  1. Using a small cookie scoop or spoon, portion the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
  2. Freeze for at least 2 hours or until firm.
Coating in Chocolate
  1. Melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Dip each frozen yogurt ball into the melted chocolate, coating completely, then place back on the parchment-lined sheet.
  3. Sprinkle with flaky sea salt immediately while the chocolate is still wet.
Final Freezing
  1. Freeze for another 30 minutes until the chocolate is set.

Notes

Store in an airtight container in the freezer for up to 1 month. For easier retrieval, use silicone mats along with parchment paper.
