Preparation
- Wash, pit, and slice the peaches. Reserve a few slices for garnish and freeze the rest for at least 2 hours until firm but not completely solid.
Blending
- In a blender, combine the frozen peach slices, honey or maple syrup, Greek yogurt, ice cubes, lemon juice, and vanilla extract.
- Blend on high speed until smooth and slushy, about 1-2 minutes. If the mixture is too thick, add a splash of water or fruit juice.
Serving
- Pour into chilled glasses, garnish with the reserved fresh peach slices and mint leaves, and serve immediately.
- If not serving right away, store in the freezer and let sit at room temperature for 5-10 minutes before serving to achieve the perfect slushy consistency.
Notes
For variations, try adding bourbon for a boozy twist, swapping Greek yogurt for dairy-free options, or mixing in berries. Best enjoyed on the porch with good company.
