Preparation of the Crust
- In a mixing bowl, combine the crushed vanilla wafers, melted butter, brown sugar, and cinnamon until the mixture resembles wet sand.
- Firmly press this mixture into the bottom of a 9×13-inch glass dish and chill for 10–15 minutes.
Cheesecake Layer
- Beat the cream cheese, powdered sugar, and vanilla until the mixture is smooth and creamy.
- Gently fold in 1 cup of whipped topping, then spread it evenly over the chilled crust.
Peach Layer
- In another bowl, mix the peach pie filling, diced peaches, cinnamon, and nutmeg.
- Spread this mixture evenly over the cheesecake layer.
Add Whipped Topping
- Spread the remaining whipped topping over the peach layer, creating soft swirls on top.
Crumble Topping
- Combine the crushed vanilla wafers, graham cracker crumbs, melted butter, and brown sugar.
- Sprinkle this topping over the whipped layer.
Decoration and Chilling
- Finish off with extra diced peaches scattered on top.
- If you like, drizzle with a quick vanilla glaze made by mixing ½ cup powdered sugar, 1–2 tbsp milk, and ¼ tsp vanilla extract until smooth.
- Refrigerate the entire dish for at least 4 hours, or overnight for the best texture.
Serving
- Slice into squares and serve cold.
Notes
Make sure your cream cheese is at room temperature so it mixes smoothly. Feel free to add more spices or a splash of almond extract for a twist. Consider adding crushed nuts or chocolate chips between layers for added texture.
