Preparation
- Spray a 9x9 pan with nonstick spray and line it with parchment paper for easy removal later.
Make the Peach Filling
- In a medium saucepan over medium heat, combine diced peaches, light brown sugar, lemon juice, cinnamon, and nutmeg. Allow it to cook for about 4-6 minutes until bubbling.
- In a small bowl, mix the corn starch with the water, then stir this into the peach mixture. Cook for an additional minute before removing from heat and adding the vanilla.
- Transfer the filling to a medium bowl and let it cool completely in the fridge.
Make the Bars
- Preheat your oven to 350°F (175°C).
- In a medium bowl, melt the butter and mix in the remaining bar ingredients, reserving one cup for the topping.
- Press the rest firmly into your prepared pan and bake for 10 minutes.
- Spread the cooled peach filling evenly over the crust, then sprinkle or dot the reserved crumble mixture over the peaches.
Bake the Bars
- Return the pan to the oven and bake for 28 to 33 minutes until the topping is golden brown.
- Let the bars cool to room temperature before refrigerating for at least 2 hours.
Glaze
- Whisk together all glaze ingredients, adjusting for consistency with more milk or powdered sugar as needed.
Notes
These bars can be served with whipped cream or a scoop of vanilla ice cream. For an extra flavor burst, consider adding diced strawberries or blueberries to the filling.
