Ingredients
  

Peach Filling
  • 2 cups fresh or canned peaches, diced
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch (optional, for thickening)
Donut Ingredients
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
Cream Cheese Filling
  • 4 oz cream cheese, softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
Topping (optional)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar for cinnamon sugar topping
  • 1/2 tsp cinnamon for cinnamon sugar topping

Method
 

Prepare the Peach Filling
  1. In a small saucepan over medium heat, combine diced peaches with sugar, lemon juice, and cinnamon.
  2. Cook for 5 to 7 minutes, stirring occasionally, until the peaches start to release their juices and soften.
  3. For a thicker filling, dissolve cornstarch in water and stir it in, cooking for an additional minute until thickened.
  4. Set aside the filling to cool.
Prepare the Donut Batter
  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the melted butter, buttermilk, egg, and vanilla extract.
  3. Combine the wet and dry ingredients, mixing until just incorporated.
Make the Cream Cheese Filling
  1. In a small bowl, mix softened cream cheese, sugar, and vanilla extract until smooth.
Assemble and Cook
  1. Preheat the oven or fryer according to the preferred cooking method.
  2. If frying, drop spoonfuls of the donut batter into hot oil, or pipe into a greased donut pan if baking.
  3. Add a spoonful of peach filling and cream cheese mixture into the center of each donut before sealing or covering.
  4. Fry or bake until golden brown, about 10-12 minutes if baking.
Serve
  1. Dust with cinnamon sugar or drizzle with glaze before serving warm.

Notes

Make sure your butter and cream cheese are at room temperature for easy mixing. For added flavor, consider adding nutmeg to the filling or chopped pecans to the donut batter. Do not skip the cooling step to allow flavors to meld.
