Ingredients
  

Truffle Mixture
  • 200 g white chocolate (good quality) Use high-quality white chocolate for best results.
  • 1/4 cup pure cream
  • 1/4 cup passionfruit pulp Adjust quantity for a stronger flavor.
  • 1/2 tsp vanilla paste
  • 1 pinch sea salt
  • 200 g shortbread (crushed)
Decoration
  • 100 g white chocolate (extra, for decoration) Melt for drizzling over truffles.
  • 1 cup flaked almonds (lightly crushed) For additional texture.
  • 1 cup shredded coconut (toasted) For additional flavor.

Method
 

Preparation
  1. Finely chop 200g of good quality white chocolate.
  2. Warm the cream in a heavy-based saucepan over low heat until it just begins to boil.
  3. Remove from heat and add the chopped chocolate; stir once and let it rest for a minute.
  4. Stir until the chocolate is fully melted and smooth.
  5. Add the passionfruit pulp, vanilla, a pinch of sea salt, and the crushed shortbread to the mixture.
  6. Combine everything into a rich, velvety blend and transfer to a shallow dish.
  7. Refrigerate for about 3 to 4 hours until firm.
Forming Truffles
  1. Once chilled, scoop out portions and roll them into balls.
  2. Place on a tray lined with baking paper and refrigerate for an additional hour.
Decoration
  1. Melt the extra 100g of white chocolate.
  2. Drizzle over the cold truffles, then sprinkle with toasted almonds and coconut before the chocolate sets.

Notes

Store truffles in an airtight container in the refrigerator for up to five days. Best enjoyed at room temperature. Feel free to get creative with toppings!
