Ingredients
  

For the pudding
  • 2 tbs butter Room temperature
  • 3/4 cup sugar
  • 2 tbs self-raising flour, sifted
  • 1 pinch salt, sifted
  • 2 pcs eggs, separated Use room temperature eggs
  • 4 pcs passionfruit Fresh
  • 1 cup milk

Method
 

Preparation
  1. Cream the butter and sugar together until the mixture is light and fluffy.
  2. Gradually add the sifted flour and salt, blending gently until fully incorporated.
  3. Introduce the pulpy passionfruit, egg yolks, and milk to the mix, stirring until smooth and cohesive.
  4. In a separate bowl, beat the egg whites until they form stiff peaks, then carefully fold them into the pudding mixture.
Baking
  1. Pour the combined mixture into a greased ovenproof dish.
  2. Place this dish in a larger one filled with cold water, creating a gentle steam bath.
  3. Bake at 180-200 degrees Celsius for around 40 minutes, or until the top is golden and slightly set.

Notes

Best served warm, possibly with a dollop of whipped cream or a sprinkle of fresh passionfruit seeds. Store leftovers in the refrigerator for up to three days.
