  • 1/4 cup chia seeds
  • 1 cup coconut milk Use full-fat for creamier texture.
  • 1/4 cup fresh lemon juice Fresh is best for flavor.
  • 1 tablespoon lemon zest Use fresh for the brightest flavor.
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
Toppings (optional)
  • to taste fresh fruit Berries, mint, or toasted coconut.

Method
 

Preparation
  1. In a mixing bowl or jar, combine the chia seeds with coconut milk.
  2. Add lemon juice, lemon zest, honey or maple syrup, vanilla extract, and a pinch of salt.
  3. Stir well to combine, using a whisk or fork to ensure the chia seeds are evenly distributed.
  4. Allow the mixture to sit for about 5 minutes, then stir again to prevent the seeds from settling.
  5. Pour the mixture into a container or individual serving jars and cover.
  6. Refrigerate overnight (or at least 4 to 6 hours) for the best consistency.
Serving
  1. In the morning, give your pudding a good stir and adjust sweetness if necessary.
  2. Spoon it into jars and top with fresh berries, mint leaves, or toasted coconut.

Notes

Store in the refrigerator for up to 4-5 days. Stir before serving for best texture.
