Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 pinch salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 3/4 cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
Optional Glaze
  • 2 tbsp honey For an extra layer of flavor
  • 2 tbsp orange juice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease your favorite baking pan.
  2. In a bowl, whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, combine melted butter, honey, and eggs. Stir until well combined.
  4. Add the orange juice, orange zest, and grated ginger to the wet ingredients and mix well.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
Baking
  1. Pour the batter into the prepared baking pan and bake for 40-45 minutes, or until a toothpick comes out clean.
  2. If using the optional glaze, brush the warm cake with honey-orange glaze after baking.
  3. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve with a dollop of whipped cream or a scoop of vanilla ice cream. To store, wrap in plastic wrap and keep in an airtight container for up to three days or freeze for a month.
