Ingredients

  • 6 tablespoons flour
  • 3 tablespoons cocoa powder Consider using dark cocoa powder for richer flavor.
  • 1 cup sugar
  • 3 large egg yolks
  • 2 cups milk
  • 1 teaspoon vanilla extract
For the crust
  • 1 store-bought pie crust Can use a homemade crust if preferred.

Method
 

Prepare the pie crust
  1. Prepare the pie crust according to the package directions.
Make the filling
  1. In a medium bowl, sift together the flour, cocoa powder, and sugar.
  2. Mix the egg yolks into the dry ingredients.
  3. Slowly add the milk in a steady stream, stirring continuously.
  4. Transfer the mixture into a medium saucepan over medium heat.
  5. Stir continuously until the mixture thickens into a custard.
  6. Remove from heat and fold in the vanilla extract.
Assemble the pie
  1. Pour the filling into the baked pie crust and smooth the surface.
  2. Cover and chill in the refrigerator for at least 1 hour, or up to 24 hours.
Serve
  1. Serve with whipped cream or a dusting of cocoa powder.

Notes

Store any leftover pie in the refrigerator for up to 3 days in an airtight container. Consider adding chocolate shavings or toasted nuts for garnish.
