Pancake Ingredients
  • 1 C Pumpkin Purée
  • 1.5 C Cottage Cheese
  • 3/4 C Milk of Choice
  • 2 Eggs
  • 2.5 C Old Fashioned Oats
  • 2 teaspoon Baking Powder
  • 2 teaspoon Vanilla Extract
  • 3/4 - 1 teaspoon Pumpkin Pie Spice
  • 1/4 C Maple Syrup
  • 1-2 tablespoon Butter for cooking

Method
 

Preparation
  1. Gather all ingredients, except the butter, in a blender.
  2. Blend ingredients until a velvety batter forms.
Cooking
  1. Melt butter in a sauté pan over medium heat.
  2. Reduce heat to medium-low and pour approximately one-eighth of the batter into the pan.
  3. Cook until bubbles appear on the surface, then gently flip the pancake.
  4. Press down softly with a spatula and cook until both sides are golden brown.
  5. Repeat with the remaining batter until all pancakes are cooked.

Notes

For the fluffiest texture, flip pancakes gently and cook fully on one side before turning. You can adjust the amount of pumpkin pie spice to fit your taste.
