Ingredients
  

Base Ingredients
  • 1.5 cups soft medjool dates (200g)
  • 1.5 cups mixed unsalted nuts (210g)
  • 0.5 cups tahini (120g)
  • 3 tbsp raw cacao powder
  • 3 tbsp pure maple syrup
  • 1 pinch sea salt (optional)
  • 4 tbsp melted coconut oil
Topping Ingredients
  • handful chopped nuts (optional)
  • handful goji berries (optional)

Method
 

Preparation
  1. Start by adding all the base ingredients into your food processor. Blend them together until they form a soft, smooth paste. If your mixture doesn’t easily come together, add a tablespoon of water to help it along.
  2. Once everything is combined, divide the mixture into 12 equal portions. Press these down firmly into a lined mini brownie tin or muffin tin.
Topping
  1. In a bowl, mix together the topping ingredients until they’re velvety smooth. Spoon a generous dollop onto each brownie. For an added touch, sprinkle over some chopped nuts or goji berries.
  2. Pop the brownies back in the fridge for at least an hour to set.

Notes

Store these brownies tightly wrapped in the refrigerator for up to two weeks or in the freezer for a quick treat later on. Let them thaw for a few minutes before serving.
