- Line an 8 inch square baking dish with parchment paper.
- In a mixing bowl, combine the cream cheese and confectioners sugar and beat until smooth.
- Add the vanilla extract and pink food coloring, mixing until well combined.
- In a separate bowl, mix the graham cracker crumbs with melted butter until it resembles wet sand.
- Press the crumb mixture into the bottom of the lined baking dish to form the crust.
- Spread the cream cheese mixture evenly over the crumb base.
- Refrigerate for at least 4 hours, or until set.
- Remove from the dish using parchment paper and cut into bite-sized squares.
Notes
Serve chilled on a colorful platter and garnish with confectioners sugar, crushed freeze-dried strawberries, or edible flowers. Store in the fridge for up to 5 days or freeze for longer storage.
