Ingredients
  

For the cheesecake filling
  • 8 oz Cream Cheese Bring to room temperature for smoother filling.
  • 1 cup Confectioners Sugar Extra for garnish if desired.
  • 1 tsp Vanilla Extract
  • 1 drop Pink Food Coloring Add gradually for desired shade.
For the crust
  • 1.5 cups Graham Cracker Crumbs Can substitute with other biscuits.
  • 0.5 cup Unsalted Butter Melted.

Method
 

Preparation
  1. Line an 8 inch square baking dish with parchment paper.
  2. In a mixing bowl, combine the cream cheese and confectioners sugar and beat until smooth.
  3. Add the vanilla extract and pink food coloring, mixing until well combined.
  4. In a separate bowl, mix the graham cracker crumbs with melted butter until it resembles wet sand.
  5. Press the crumb mixture into the bottom of the lined baking dish to form the crust.
  6. Spread the cream cheese mixture evenly over the crumb base.
  7. Refrigerate for at least 4 hours, or until set.
  8. Remove from the dish using parchment paper and cut into bite-sized squares.

Notes

Serve chilled on a colorful platter and garnish with confectioners sugar, crushed freeze-dried strawberries, or edible flowers. Store in the fridge for up to 5 days or freeze for longer storage.
