For the cream layer
  • 1 can 20 oz crushed pineapple, drained Use canned pineapple, drain well to avoid a soggy base.
  • 1 package 8 oz cream cheese, softened Soften at room temperature for easier mixing.
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream Beat until stiff peaks form.
  • 1 teaspoon vanilla extract
For the crust and garnish
  • Graham cracker crumbs For layering at the bottom and topping.
  • Cherries or pineapple slices For garnish.

Method
 

Preparation
  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, mixing until combined.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture.
  5. Add the drained crushed pineapple and fold until evenly distributed.
Layering
  1. In a serving dish, layer graham cracker crumbs at the bottom.
  2. Add the pineapple cream mixture on top.
  3. Top with more graham cracker crumbs and garnish with cherries or pineapple slices.
Chill
  1. Refrigerate for at least 2 hours before serving.

Notes

Keep refrigerated and covered for up to 3 days. For best texture, consume within first day of preparation; the crust will soften over time. For longer storage, freeze individual portions for up to a month; thaw in the fridge before serving.
