Method
 

Preparation
  1. In a medium bowl, combine rolled oats, creamy peanut butter, and honey or maple syrup. Stir until well combined and sticky.
  2. Optionally, fold in mini chocolate chips.
  3. Line a muffin tin with paper liners or spray with non-stick cooking spray.
  4. Evenly distribute the mixture into the muffin cups, pressing down firmly.
Chilling
  1. Refrigerate for at least 30 minutes to set.
  2. Once set, remove from muffin tin and enjoy!

Notes

Store in an airtight container in the refrigerator for up to one week. For longer keeping, freeze flat in a single layer on a tray, then transfer to a sealed bag for up to one month; thaw briefly at room temperature before serving.
