  • 1 ½ cups oats Use certified gluten-free oats for a gluten-free version.
  • ½ cup dried cranberries or raisins Feel free to customize with other dried fruits like cherries or apricots.
  • 1 cup peanut butter Substitute with sunbutter for a nut-free option.
  • 2 tablespoons maple syrup Agave syrup works as a substitute.
  • 1 tablespoon ground flax seeds
  • ½ cup vegan chocolate chips Melted for coating.

Method
 

Preparation
  1. In a large bowl, blend together the oats, dried fruit, peanut butter, maple syrup, and ground flax seeds until everything is well combined.
  2. Melt the vegan chocolate chips gently, then mix half of the chocolate into your oat mixture.
  3. Roll the mixture into little balls and press them into a lined or lightly greased mini-muffin tin.
  4. Coat the tops with the remaining melted chocolate and place them in the refrigerator for about an hour to set.
  5. Serve chilled straight from the fridge.

Notes

For added flavor, consider sprinkling sea salt on top before serving. Store in an airtight container in the refrigerator for about a week.
