Preparation
- In a large bowl, blend together the oats, dried fruit, peanut butter, maple syrup, and ground flax seeds until everything is well combined.
- Melt the vegan chocolate chips gently, then mix half of the chocolate into your oat mixture.
- Roll the mixture into little balls and press them into a lined or lightly greased mini-muffin tin.
- Coat the tops with the remaining melted chocolate and place them in the refrigerator for about an hour to set.
- Serve chilled straight from the fridge.
Notes
For added flavor, consider sprinkling sea salt on top before serving. Store in an airtight container in the refrigerator for about a week.
