- In a medium bowl, mash the banana until smooth.
- Stir in the nut butter, honey or maple syrup, cinnamon, vanilla, and salt.
- Fold in the oats until well combined. If the mixture feels too wet, add a bit more oats.
- Stir in chocolate chips, nuts, or other mix-ins if using.
- Roll the dough into 12 to 14 balls using your hands or a small cookie scoop.
- Place the bites on a parchment-lined tray and refrigerate for 20 to 30 minutes until firm.
Notes
Keep chilled in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months. Press and re-roll with a teaspoon of warmed nut butter or honey if the mixture is crumbly after chilling.
