Ingredients
  

For the crust
  • 250 g butter cookies Crumbled
  • 100 g melted butter For binding the crust
For the cheesecake filling
  • 500 g cream cheese Softened
  • 250 ml heavy cream Whipped until stiff
  • 120 g powdered sugar
  • 1 tsp vanilla extract
  • 6 sheets gelatin Or 10 g powdered gelatin
  • 250 ml lime juice or lime drink
  • 2 tbsp sugar For lime jelly preparation
  • 1 package clear cake glaze For topping
  • A few drops green food coloring Optional for color enhancement

Method
 

Preparation
  1. Crumble the butter cookies and mix them with melted butter. Press the mixture into a springform pan and refrigerate for about 20 minutes.
Making the filling
  1. Soak the gelatin according to package instructions.
  2. In a bowl, mix cream cheese, powdered sugar, vanilla, lime juice, and lime zest until creamy.
  3. Dissolve the soaked gelatin and mix it into the cream cheese mixture.
Folding in whipped cream
  1. Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  2. Spread the cream over the cookie base and smooth the top.
Chilling
  1. Refrigerate the cheesecake for at least 4 hours or overnight.
Preparing the lime jelly
  1. Heat lime juice, sugar, and cake glaze according to instructions.
  2. Optionally, add a bit of green food coloring. Let it cool slightly and carefully pour it over the chilled cream.
Final touches
  1. Refrigerate the cheesecake for another hour until the jelly layer is set.
  2. Before serving, decorate with fresh lime slices and mint leaves.

Notes

Store covered in the refrigerator for up to 5 days. Adjust sugar based on lime tartness for optimal flavor.
