Ingredients
  

Bite Ingredients
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 scoops preferred vanilla or unflavored protein powder
  • 1/3 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 a lemon, juiced plus the zest
  • 1 heaping tbsp poppy seeds
Optional Glaze
  • 3 tbsp confectioners sugar
  • 2 tsp coffee creamer

Method
 

Preparation
  1. In a mixing bowl, combine almond flour, coconut flour, and protein powder.
  2. Add poppy seeds and lemon zest to the dry ingredients.
  3. In a separate bowl, melt the coconut oil and whisk in the maple syrup.
  4. Fold the wet ingredients into the dry mixture until a firm dough is formed.
  5. If the dough is too wet, add more almond flour until the desired consistency is reached.
  6. Press the dough into a lined bread loaf pan and refrigerate for at least two hours.
Optional Glaze Preparation
  1. Whisk together confectioners' sugar and coffee creamer until smooth.
  2. Spread the glaze over the chilled bites and freeze for an additional 20 minutes.

Notes

Store the bites in an airtight container in the refrigerator for up to 5 days, or freeze for up to 1 month. Be gentle when mixing to avoid overworking the dough. Adjust sweetness to taste with maple syrup.
