No-Bake Funfetti Oreo Icebox Cake

Ingredients
  

For the cream mixture
  • 2 cups heavy cream Whipped to stiff peaks
  • 1/4 cup powdered sugar Sweetens the whipped cream
  • 1 teaspoon vanilla extract
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup Funfetti cake mix
  • 1/4 cup milk
For the cake layers
  • 1 package Oreo cookies (14.3 oz)
  • 1/4 cup sprinkles For topping

Method
 

Preparation
  1. In a large bowl, pour in the heavy cream, followed by the powdered sugar and vanilla extract. Whip until stiff peaks form and set aside.
  2. In another bowl, beat the cream cheese until smooth. Then, add the Funfetti cake mix and milk, mixing until combined.
  3. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
Assembly
  1. Grab a 9×13 inch dish and spread a thin layer of the cream mixture on the bottom.
  2. Lay down a single layer of Oreo cookies over the cream mixture.
  3. Spread another layer of the cream mixture over the Oreos.
  4. Repeat the layers until all the cookie and cream mixture are used, finishing with a final layer of cream on top.
  5. Sprinkle colorful sprinkles on top.
  6. Cover and refrigerate for at least 4 hours, or preferably overnight.

Notes

Store leftovers in the refrigerator in an airtight container for up to 4 days. Consider using flavored Oreo cookies or mixing in crushed candy for added texture.
